Mango Cranberry Lemony Butter Cake
Hubby has been craving for my lemony butter cake for the past few days...
As he will be leaving for Bangkok for a few days,
i decided to bake him this version...
I added Dried Cranberries and Dried Mango into the basic recipe. I hope he likes it.
As tomorrow is Valentine's day, it serves as a valentines day cake for us too!
Killing 2 birds with 1 stone, ain't that perfect!

Lemony Cranberry Cake
This is the end result of the Kenwood Titanium Major KM020 Flexibeater's experiment. Its a Lemony Cranberry Cake. This cake taste lemony but not overpowering and the cranberry adds a little tartness to the taste. It's actually a plain butter cake recipe that i've tweaked a little. I like this combination of ingredients.
For those who wants to try this cake, here's tweaked recipe....

4 eggs
280g caster sugar
4 tbsp lemon juice
some grated lemon + orange rind
1 tsp orange essence
As much dried cranberries as u like

Minty Mocha Marble Cake
I've modified the marble cake recipe that i've got from the internet and called it Minty Mocha Marble cake. I've added varlhona cocoa powder + mocha powder + vanilla essence into one half of the batter and some green colouring + mint extract in the other.
Result = Minty Mocha and i've used the bain-marie baking method and the cake comes out super moist and delicious.
Click on the picture to see how moist it is!

250g butter
250g SR flour
4tbsp cream + 1 tbsp for the mocha batter
260g caster sugar
4 eggs
vanilla essence
varlhona cocoa powder
mocha powder
apple green colouring
mint extract
Bain marie : 180 deg 1 hr

Mango Fresh Cream Cake
Baked the sponge cake yesterday and decorated the cake this morning for Haidyll's birthday. I used only mango as I couldn't get fresh strawberries yesterday. I hope he likes this cake.
I also baked a Chicken Pot Pie for lunch. This is one of his favourite food. Chilli crab was in the menu for dinner tonight, but unfortunately couldn't get fresh crabs today. So that will have to be KIV....
Anyway, hope he enjoy his birthday and good wishes to him, may he stay healthy and happy always and hope he succeeds in whatever he does....
